Aged/Basmati Rice


Aged rice is that rice which is kept for ageing for one or many years. It is also called old rice or basmati rice.

The main rice grain components which affect cooking and eating quality such as starch, protein and lipids remain unchanged during storage, but structural changes occur which affects its pasting and gel propertiesby bringing change in flavor and texture of cooked rice.

Why aged rice is better?

1.  Aged rice grains are more dried and dehydrated (aged) and it needs a regular amount of water at the time of cooking which will make it perfect and fluffy in texture. 
       On the other hand, new rice whiich come from newly harvested crops need less water than the regular amount at the time of cooking because new harvested rice still stay hydrated and not fully aged.

2. Aged rice always stay separated and looks good after cooking while new rice become sticky with lumps. 

3. Aged rice is all about the flavor and aroma which is intensely spicy, nutty and floral. 

4. Aged rice is easiest to digest because of its low fibre. It is also consumed globally because of its carbohydrate content which provides ample energy.

5. It also helps in relieving digestive disorders such as diarrhea, colitis and dysentry.

6. It also has 5 grams of protein every 150 gram.

7. It is also used as soothing powder for the skin. It is used in case of skin inflammation caused by smallpox, burns, measles and scalds.

8. Aged rice has all the nutrients and vitamins but new rice are polished and have nothing more than starch.

9. Aged rice contains all types of Amino acids which helps carbohydrates and proteins metabolize correctly and control the nervous system.

10. Its amino acids like Selenium helps to support proper thyroid function and even can protect against certain cancers

11. Aged rice are gluten free, high in carbohydrates but have no cholestrol. It provides energy to fuel workouts and essential minerals that your body needs to function at its optimal level .

12. Aged rice has the least amount of arsenic. Arsenic is harmful as it is linked to skin, lever and cancer. 

13. Aged rice has the most quantity of vitamins and minerals, plus it is not as calorically dense as other rice qualities
